Tasty Tuesday: Mexican Quiche

Quiche was on the menu for this month's United Methodist Women's Unit meeting so I decided to have a little fun with it.  I'm the only vegetarian so I didn't want to just make any plain cheese quiche.  

While searching for recipes I decided to mix some of my favorite flavors and try my hand at Mexican quiche.  It was a hit with all who tried it.  Here's the recipe I created.  Enjoy!

Ingredients

  • 1 unbaked 8 or 9 inch pie crust
  • 1 large red pepper, chopped
  • 2 cups shredded Mexican blend cheese
  • 1 4 ounce can of diced green chilies 
  • 4 large eggs, beaten
  • 1 cup salsa
  • 1 cup milk
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt & pepper to taste
  • 1 tsp dried cilantro
  • 1 tsp dried parsley
  • sliced black olives for garnish

Directions

Preheat oven to 375 degrees.



Line your pie pan with the unbaked pie crust and prick the bottom with a fork.  Sprinkle cheese, bell pepper, and green chilies onto bottom of the pie crust.  Combine eggs, salsa, milk, herbs and spices in a small bowl and whisk together until blended. Pour into pie shell. 


Bake for 40 to 45 minutes or until the quiche is set in the middle.  Cool for at least 15 minutes before cutting into 6 or 8 wedges.  Top each slice with black olives to serve.
